Mango Rice and Beans With Shrimp

WHAT YOU NEED:
  • 1 teaspoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3/4 cup uncooked yellow rice
  • 1 1/2 cups low sodium, low fat vegetable broth or chicken broth
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 2 cans of black beans, drained
  • 15-20 peeled shrimp (leave tails on)
  • 2 cups fresh or frozen mango pieces

COOK THAT ISH:

  1. In a medium size pot over medium-high heat, heat the oil. Add the onion and garlic and saute for 4 minutes. Add the rice and saute for 2 minutes.
  2. Add the vegetable broth, bring to a boil, cover and lower the heat and cook for 20 minutes. Add the spices and black beans.
  3. About 10 minutes into cooking the rice, add mangoes 
  4. Grill shrimp in a skillet coated with cooking spray. when shrimp has a light brown color to it add to rice. Turn heat down to a simmer and let shrimp sit in the rice for about 10 minutes

Rise and Shine Casserole

6 slice of bread (I used potato bread)

6 eggs

4 cups of broccoli

2 cups of milk ( I used almond milk)

1 cup of cheddar cheese

1 tablespoon of cinnamon

1 teaspoon of salt

1 teaspoon of salt

1 package of chicken or turkey sausage

Preheat oven to 350 degrees. Spray casserole dish with non stick spray. Tear bread into pieces and layer it on the bottom dish and sprinkle bread with cinnamon. In a non stick pan cook broccoli and sausage. Simply brown the sausage and cook broccoli until warm. In a medium size bowl beat eggs, milk, and salt and pepper together. Next add cheese on top of bread and add broccoli and sausage. Finally add egg mixture by pouring over ingredients. Place in oven for 40-45 minutes or until egg looks golden brown. I also found drizzling a little maple syrup over it when it first comes out of the oven makes it pretty tasty too.
